Probiotic Berry Slice

Gut-loving Probiotic Berry Slice ✨🌿 with these frozen berry slices which are packed with antioxidants, protein, healthy fats and gut-loving probiotics! These are best to enjoy when they are slightly thawed which taste like ice pops! I topped them with some cacao coated freeze-dried blackcurrants which are so heavenly. 


✖️PROBIOTIC BERRY SLICE

Ingredients 

🌿 Base:

  • 1/2 cup almond meal
  • 1 tsp coconut oil
  • 1 tsp liquid sweetener
  • 1 tbsp coconut yogurt
  • Optional: 1 tsp blueberry concentrate 

 

🌿 Filling:

  • 1 cup fresh strawberries (7 medium)
  • 1/3 cup cashews, soaked for min. 2 hours then rinsed and drained 
  • 1/2 cup coconut yogurt or coconut cream
  • 1 tbsp coconut oil
  • 1 tbsp liquid sweetener of choice
  • 1 tbsp fresh lemon juice
  • 1 scoop PURE

 

🌿Topping:

  • Freeze-dried blackcurrants
  • Fresh strawberry slices


Method

🌿Base

  1. Mix everything in a bowl and combine well to form a 'buttery' consistency
  2. Press the mixture onto the lined tray
  3. Pop into the freezer

🌿Filling

  1. Place all the filling ingredients into the blender/food processor
  2. Blend until the mixture is smooth.
  3. Pour the mixture over the base and spread out evenly
  4. Top with toppings of choice and pop back into the freezer to set
